How To Make Cinnamon Apple Loaf Cake
Preheat the oven to 325.
Line a loaf pan with parchment paper.
In a large bowl beat together the softened butter, cane sugar and brown sugar for 2 minutes. Mix in the vanilla extra. Mix in the eggs until totally combined.
In a separate bowl whisk together the all purpose flour, baking soda, baking powder, salt, cinnamon, ground ginger and ground nutmeg.
In a small bowl stir together the buttermilk and cinnamon.
Before mixing the wet and dry ingredients, prepare the apples. Chop the apples into ½"x¼" pieces. Toss them with the cinnamon and flour until coated.
To the large bowl alternately stir in the dry ingredients and the buttermilk/apple juice until mixed. Fold in the apples.
Pour the batter into the pan and bake for 1 hour, turning the pan during the halfway mark. Check for doneness with a toothpick, it will come out clean. Bake longer if the toothpick does not come out clean.
Remove from the oven and cool in the pan for 20 minutes. Transfer to a wire rack to continue cooling. To make the glaze whisk together powdered sugar with the vanilla extract and 1 teaspoon of water at a time until it reaches a thin enough consistency to spread over the cake.
Once the loaf cake has cooled completely, spread on the glaze.

Notes
If the cinnamon apple loaf cake is not done at 60 minutes, keep baking at 3 minute increments.
