If you've ever had funfetti cake then you know just how undeniably delicious it is. Kind of like chocolate cake layered with cheesecake. I gotta have it.
We can't say no to funfetti, no matter how old we get.
Truth.
And sorry (not sorry) it's the box funfetti that is still the best. All soft and tender, totally perfect, with the vanilla icing and sprinkles on top.
Today we're making my homemade oreo funfetti cookies recipe. But we're going to make them without cake mix. You only need a handful of golden oreos and I love how they kind of mimic the vanilla frosting.
Here's the deal though, these are sweet. That's your fair warning.
They are super soft and chewy on the inside, with a bit of a crunch around the outside. Is there any better texture for a cookie?
What's In a Funfetti Oreo Cookie?
Let's talk about all the yummy goodies in this recipe. There's all sorts of fun stuff. Okay just sprinkles and golden oreos. The rest is the same (haha).
- sprinkles - rainbow variety, although a themed sprinkle could be fun for halloween or Christmas
- golden oreos - regular size or mini will work, but you need a cups worth
- butter - melted butter for an extra chewy cookie
- brown sugar and white sugar - both sugars for this sweet sugar cookie
- vanilla extract - a bit extra than we typically do, a whole teaspoon for all the yummy vanilla flavor
- baking soda - for lift and puffiness
- egg - just one
- salt - to enhance flavors
- flour - gotta have flour
How To Make Funfetti Oreo Cookies
There's a few key steps to that chewy inside, crunchy edge texture.
First, use melted butter.
Second, chill the cookie dough.
Third, under bake just slightly.
Use parchment paper over your cookie sheet so they don't stick. And you can use a tablespoon to scoop your dough, or my method of choice is a cookie scoop.
It looks like an ice cream scoop, but smaller scale.
When you add the sprinkles, be mindful that you don't want to be mixing and mixing, the color will start to transfer on to the dough.
If you want larger chunks of oreos than keep your chops rough, if you want tiny pieces than crush them up. In the pictures, you can see I left the pieces larger.

Funfetti Cookie Dough
Chill the cookie dough in the fridge for 15-30 minutes. Just a short cool down.
I have no wise explanation, just that I decided to try it this way and it wound up being great.
Typically I don't chill my cookie dough.
I really think it's personal preference. But it comes down to being impatient! I have no patience for the cookies to take a little nap in the old fridge.

Oreo Funfetti Sprinkle Sugar Cookies
These oreo funfetti cookies are a mashup between a sugar cookie, funfetti cake vibe and golden oreos. Chewy on the inside with a bit of crisp around the edges. They are just as fun to eat as they are to look at!
Ingredients
- ½ c butter, melted
- ½ c brown sugar
- ¼ c white sugar
- 1 tsp vanilla extract
- 1 ½ c + 2 tbsp flour
- ½ tsp baking soda
- ½ tsp kosher salt
- 1 egg
- 3 tbsp rainbow sprinkles
- 1 c golden Oreos, rough chopped (about 8 Oreos)
Instructions
- Preheat oven to 350
- Mix together the melted butter, white sugar and brown sugar for 2-3 minutes
- Stir in the vanilla and egg, mix until the egg is mixed in
- In a separate bowl combine the flour, baking soda and salt
- Add the dry ingredients to the wet, stir just until almost combined
- Add the Oreos and sprinkles
- Stir just until combined
- Put the cookie batter in the fridge and chill 15-30 minutes
- Line a cookie sheet with parchment paper
- Use a cookie scoop or tablespoon to place onto the cookie sheet
- Bake for 8-9 minutes (this is a slight under bake for chewy cookies, add an extra minute if you are anti under baking)
- Pull from oven and cool slightly, transfer to a wire rack
- Serve
