My son officially started pre-k last week which is exciting because he absolutely loves it and has the most amazing teacher. It was a busy morning getting everyone out the door for his first day. As soon as I got home I started up the slow cooker - it was pulled pork BBQ time folks!
For me, half the battle of a slow cooker dinner is actually remembering to fill it, does that happen to you too? I was really excited for pulled pork sandwiches so you bet I remembered to load it that morning.

What kind of pork to use?
For the pork I use a pork butt and then rubbed a dry rub all over it and cooked it on low for 8 hours. It's a fairly inexpensive cut of meat, especially when they are on sale!
Pork butt comes from the higher end of the shoulder and can be tough and fatty - so that's why slow cooking it is the best method. It winds up just melting in your mouth after it's cooked on low all day.
Pork shoulder works too and is equally delicious after a slow cook. So grab whatever is a better price at the time?
After the time is up you just shred it with a couple of forks and drizzle on all the tangy BBQ sauce, so easy. You could even make it the night before. The BBQ sauce for this recipe is a bit sweet and tangy, it goes really nice with the crunchy apple slaw thats piled high on top of the sandwich.
Apple Slaw
I've never been a huge fan of coleslaw, it looks and tastes gloopy and it does nothing for me {if you love coleslaw all the power to you my friend}.
The apple slaw is simply a mixture of a red apple, green apple and cabbage. I toss it in a bit of pre-made salad dressing but it's not necessary.
This recipe is quick and easy.

Ingredients
- 5 lbs pork butt
- kaiser rolls
- green cabbage
- 1 granny Smith apple
- 1 fuji apple
- Panera brand fuji dressing
tangy bbq sauce
- ¾ c ketchup
- 1 tbsp yellow mustard
- ¼ c brown sugar, packed
- 2 tbsp apple cider vinegar
- 2 tsp chili powder
- ½ tsp onion powder
- ¼ tsp cumin
- ½ tsp Worcestershire
- ¼ - ½ tsp salt, start at ¼, taste and add more if you prefer
- ¼ tsp black pepper
dry rub
- 2 tbsp brown sugar
- 1 tsp salt
- 1 tsp onion powder
- 1 tsp chili powder
- 1 tsp paprika
- ½ tsp garlic
Instructions
- Turn slow cooker to low heat
- Mix all the dry rub ingredients together and rub it on the pork butt, put this in the slow cooker
- Cover and continue to cook for 8 hours.
- Add all of the ingredients for the tangy bbq sauce to a small saucepan, over low/med heat
- Bring to a boil, whisking constantly, for 2-3 minutes
- Reduce heat to low and simmer for 15 minutes
- Check on the sauce every couple minutes so it doesn't stick to the bottom of the pan You can make this ahead of time and store it in the fridge, reheat in a sauce pan prior to serving
- Remove the core of the apples and the cabbage
- Using a mandolin slicer shred the cabbage and use the matchstick blade for the apples Alternatively slice the cabbage and apples very thin
- Toss in a bowl with a small splash of fuji apple dressing (or no dressing)
- Slice a kaiser roll in half, add some of the pulled pork, drizzle with BBQ sauce and top it with the apple slaw
