I love this soup so much and I know your family will too! It's such a fun dinner for kids (and adults). You'll be pressed to name one person who could turn down a bowl of hearty meat and vegetable alphabet soup.
Your kids will have so much fun finding the letters of their name they won't even mind gobbling down the carrots, celery, potatoes, corn and green beans in front of them.

Ingredients
To make the soup here are the ingredients you will need. Make sure to see the recipe card for the full ingredient run down and instructions.

- olive oil
- garlic cloves
- onion
- carrots
- celery
- petite gold potatoes
- green beans
- vegetable broth
- 28 ounces diced tomatoes
- Italian seasoning
- alphabet pasta noodles - you can find these in the hispanic cuisine aisle of your grocery store
- salt
- pepper
Instructions
Step 1. Brown the ground beef and drain any fat out. Using olive oil, saute the onions, carrots and celery for 5-10 minutes. You want to take the bite out of the vegetables and start getting them tender during this step.
Add the rest of the vegetables; potatoes, green beans and corn.
Step 2. Pour in the diced tomatoes, vegetable broth, Italian seasoning and add back in the ground beef.
Bring this to a low rolling boil for 10 minutes.
Step 3. Add the alphabet pasta and cook an additional 10 minutes. You may be tempted to add more than ½ cup of alphabet pasta, but I promise you the puff way up and absorb a lot of liquid. If you want to add more pasta you will need to add more vegetable broth.
To serve, add some freshly grated parmigiano reggiano cheese on top of the bowls of soup. It adds the perfect flavor to compliment the soup!

Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 1 small onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 petite gold potatoes, cut in cubes
- ¼ lb green beans, trimmed and cut in half (about 1 cup)
- ½ frozen corn
- 8 c vegetable broth
- 28 oz diced tomatoes, canned
- 2 tsp Italian seasoning
- Pepper
- Salt to taste
- ½ c alphabet pasta noodles
- Optional: parmigiano reggiano cheese
- Optional: fresh basil leaves
Instructions
- Brown the ground beef, transfer to a plate lined with a paper towel to drain
- Wipe out the pan with a paper towel and drizzle in 1 tbsp olive oil
- Add the onion, carrots and celery and sauté for 7-10 min
- Add in the potatoes, green beans and frozen corn
- Pour in the diced tomatoes, vegetable broth, Italian seasoning and the ground beef
- Bring to a rolling boil and cook for 10 minutes
- Add in the alphabet pasta and cook an additional 10 minutes, stirring occasionally
- Season to taste with salt and pepper
- Optionally you can sprinkle fresh parmigiano cheese and fresh basil on top after serving
Notes
If you add more pasta you will need more broth, keep that in mind - an extra ½ cup of alphabet pasta needs an extra 2 cups of broth
