A little sweet, a little salty and they completely embody what trail mix is. Trail mix cookies are super easy to make. Under 30 minutes is all it takes.
Trail mix cookies are made with all the typical trail mix ingredients (plus a few extras I threw in). In these cookies you'll find peanuts, cashews, raisins, m&m's, chocolate chips and peanut butter chips.
Everything is better with peanut butter chips!

How To Make Trail Mix Cookies
Start by preheating the oven to 375.
In a mixing bowl stir together the melted butter and sugars for exactly 1 minute on medium speed.
Mix in the vanilla extract and egg on low for another minute until completely combined.
Mix in the flour, baking soda and salt. On low mix in the peanuts, cashews, raisins, m&m's, chocolate chips and peanut butter chips.
Line a cookie sheet with parchment paper. Using a 1.5 tablespoon scoop, scoop out the cookie dough and place them evenly spaced on the cookie sheet.
Roll the dough into balls using your hands.
Bake for 9-10 minutes.
*If you'd like your cookies to "show what's inside" and make them pretty on top, take the cookies out after 8 minutes and stick extra filling ingredients on top. Then bake an additional 3 minutes.
Take out of the oven, rest 2 minutes then transfer to a wire cooling rack before serving.
