Strawberry feta salad. I can't say enough about it, except that you will want to eat it on repeat every week. It's magical. My absolute favorite summer salad. It even beats the chinese chicken salad with mandarins.
This strawberry feta salad is on the sweeter side. It has sliced strawberries and glazed walnuts, both are sweet. But then it also has cucumbers (great crunch) and feta cheese to balance it out.
The balsamic dressing is tangy with a hint of sweetness (from honey).
This is the perfect lunch salad. It's so simple to make you don't even need to prep it. I mean, the whole recipe is 5 ingredients (not including the dressing). This doesn't mean you can't prep it, because you totally can. I'm just trying to relay how easy it is to make.
The only thing you will want to have ready ahead of time is the creamy balsamic vinaigrette dressing. Don't bother buying a bottle, you will 100% want to make this recipe for it. It's amazing!

How To Make Creamy Balsamic Vinaigrette Dressing
To make the dressing you will need a food processor or blender. You could whisk this up by hand but it will just take longer since the dressing needs to emulsify.
In a food processor add the chopped up shallot, balsamic vinegar, dijon mustard, honey and a pinch of salt and pepper. Whirl it around to break up the shallot pieces.
With the lid on slowly start to drizzle in the oil (there should be a small opening to do this). The consistency should thicken and it's done once it can coat the back on a spoon.
Always choose a flavorless oil when you make your own dressings.

Ingredients
- 5 ounces spring mix lettuce
- 1 lb strawberries
- ¼ c crumbled feta cheese
- 3 ounces glazed walnuts
- 1 english cucumber, diced
Creamy Balsamic Dressing
- ½ large bulb shallot, chopped
- ¼ c balsamic vinegar
- 1 tsp dijon mustard
- 1 tbsp honey
- Pinch of salt
- Pinch of pepper
- ¼ c flavorless oil
Instructions
- In a food processor or blender add the chopped shallot, balsamic vinegar, dijon mustard, honey, pinch of salt and pinch of pepper. Blend. With the lid on drizzle in the oil (most blenders and food processor will have a spout for this) so it slowly blends in.
- In a large bowl add the spring mix, sliced strawberries, feta cheese, walnuts and diced cucumber.
- Drizzle on the dressing, or serve individually and add the dressing to each bowl.
Notes
If the dressing has not thickened enough, try drizzling in a little more oil, it should coat the back of a spoon and does thicken more and more as it sits.
