If it were acceptable (and calories didn't count) I would eat this pasta every single day! It is so delicious. And I love that it's really easy to make.
The inspiration behind this recipe is actually a box of pastaroni, the garden herbs one. Every now and again back in the day I remember having it and loved it. So with the flavors of this dish, I was going for that same rich and creamy with a bit of herbs taste.
I know your family will love this one. It's my kids favorite when I make it.
Ingredients
- Angel Hair Pasta: Any angel hair pasta will work just make sure it's angel hair and not spaghetti.
- Butter: Go for a salted butter for more flavor.
- Italian Herb Seasoning: This is the dried herb in a container, it gives it just a pinch of flavor.
- Chicken Better Than Bouillon: Without this, something is missing, it needs it for flavor. Better than bouillon is like a thick paste, it comes in a jar. All major grocery stores should sell this in the seasoning aisle.
- Heavy Cream: For richness.
- Parmigiano Reggiano: Go for the real deal parmigiano reggiano cheese, not the fake parmesan in a plastic container. It will taste completely different if you use the wrong cheese.
- Milk: Helps to thin the sauce, it get's pretty thick.
- Salt, Pepper: For flavor.
How To Make Creamy Angel Hair Pasta
Boil a large pot of water, add a few pinches of salt.
Melt the butter in a medium saucepan over low heat. Add the minced garlic and Italian herb seasoning. Cook for 2-3 minutes, until it smells fragrant.
Stir in the heavy cream, chicken better than bouillon, salt and pepper. Bring the heat up to medium and stir until steam starts to form. Add the fresh grated parmigiano reggiano. Stir until it starts to thicken then reduce the heat to med/low and continue stirring an additional 5 minutes. It should thicken up quite a bit.
Add the angel hair pasta to the boiling water. Cook until the pasta is al dente. Before draining the pasta, scoop out ¼ cup of starchy pasta water.
Start adding in the milk ¼ cup at a time, stirring to mix. It will get thinner, this is what you want.
Add drained angel hair pasta to the sauce, tossing to coat the pasta.
