How To Make Peanut Butter Cookies
Preheat the oven to 375 degrees.
In a bowl, beat together the butter and sugars and light in color.
Beat in the peanut butter for an additional minute. Mix in the vanilla extract and egg until well combined.
To the bowl add the flour, salt and baking soda. Beat everything together.
Using a 1 ½ tablespoon cooking scoop, scoop out the cookie dough.
Place the cookie dough on a baking sheet lined with parchment paper.
Using your hands, roll the cookie dough into balls.
With the back of a fork press down to make a plus sign, flattening the cookies slightly.
Bake the cookies for 10-12 minutes. Transfer to a wire rack to cool.
Store these cookies on the counter if you'll be eating them within 2-3 days. Otherwise you can freeze them for later.

- ¾ c creamy peanut butter
- 1 tsp vanilla extract
- 1 egg
- 1 ¼ c flour
- ½ tsp salt
- ¾ tsp baking soda
