Maple Pumpkin Crunch Bread
This pumpkin bread is soft, tender, and full of warm cinnamon and pumpkin spice, with walnuts and pecans baked right into it. But the real magic is the crunchy pecan and walnut streusel on top, finished with a sweet maple glaze that sinks into all those craggy bits.
Ingredients
Batter
- 6 tbsp neutral flavored oil (82 grams)
- ¾ c dark brown sugar
- ¼ c cane sugar
- 1 ½ tsp vanilla extract
- 2 eggs
- ½ c buttermilk
- ¾ c pumpkin puree (measured as a dry ingredient)
- 2 ¼ c all purpose flour
- 1 tsp kosher salt
- ½ tsp baking soda
- 1 tsp baking powder
- 1 tsp pumpkin pie spice
- ½ tsp cinnamon
- ½ c pecans, chopped
- ½ c walnuts, chopped
Streusel
- ¼ c pecans, chopped
- ¼ c walnuts, chopped
- 4 tbsp butter, softened
- ¼ c dark brown sugar
- ½ c flour + 2 tbsp
- 1 tsp cinnamon
- Pinch salt
Maple Glaze
- ½ c powdered sugar
- 2 tbsp maple syrup
- ¼ tsp vanilla extract
- 1 tsp water
Instructions
- Preheat oven to 400 degrees.
- In a large bowl whisk together the sunflower oil, brown sugar, cane sugar, vanilla extract, eggs, buttermilk and pumpkin puree until smooth.
- Sift (or whisk) together the flour, salt, baking soda, baking powder, pumpkin pie spice and cinnamon. Add the dry ingredients to the wet, mix until almost combined then add the nuts. Stir.
- Make the streusel by using your hands to mix everything together.
- Line a 1 ¼ lb loaf pan with parchment paper. Add the batter and top with the streusel.
- Bake for 400 degrees for 10 minutes then reduce the heat to 350 degrees and bake for an addition 50-60 minutes, once a toothpick comes out clean. If the top starts browning too quickly, loosely tent with foil the remainder of the bake.
- Once removed from the oven, cool.
