sift the dry ingredients three times, add cold cubed butter
use your hands to mix the butter in
add in buttermilk and egg
use a large spoon to combine
roll it out on a floured surface
use a biscuit cutter to cut out circles
*dip the biscuit cutter in flour after each time
place the scones on a baking sheet, lined with parchment paper and brush the tops with buttermilk and a sprinkle of sugar

serve with jam and cream
