Piled High Skillet Carnitas Nachos

Skillet carnitas nachos loaded up with all the good stuff; refried beans, jack cheese, jalapeños, onions, tomatoes and we can't forget some homemade guacamole.

  • Carnitas already prepared
  • 1 8 oz bag tortilla chips
  • 1 can refried beans
  • 16 oz jack cheese shredded
  • Jarred jalapeños
  • White onion
  • Tomatoes
  • Sour cream


  • 2 avocados
  • 2 tbsp white onion
  • 1/2 lime juiced
  • squeeze of lemon juice
  • cilantro
  • 1/4 tsp cumin
  • 1/4 tsp chilli powder
  • pinch of salt


  • Preheat the oven to 375
  • Spray a skillet with cooking spray or grease with choice of oil
  • Layer the nachos in this order for a total of 3 layer
  • chips > refried beans > carnitas > onions > tomatoes > jalapeños > cheese > REPEAT
  • Place the skillet in the oven and bake for 10-15 minutes or until the cheese is melted and golden around the edges (you want the underneath layers to also be melted)
  • Once out of the oven let it sit a few minutes
  • Top with guacamole and sour cream
