The Best Lemon Curd Recipe

This is the best lemon curd recipe. It's also the easiest lemon curd recipe! Perfect balance of sweet and tangy.

Ingredients

  • 1 c lemon juice, 5-6 juicy lemons
  • 1 tbsp lemon zest
  • 1 c sugar
  • 5 tbsp butter, softened
  • 4 large eggs
  • pinch of salt

Instructions

  1. Add the butter and sugar to a small pot, whisking until combined
  2. Add in the eggs, lemon juice, lemon zest and salt
  3. Whisk until the sugar has dissolved
  4. Heat the pot over low heat, whisking continuously, until the temperature of the lemon curd reaches 170 degrees
  5. This takes anywhere from 5-10 minutes
  6. Remove the pan from the heat, continue to whisk until it has cooled down
  7. Grab a bowl, with a strainer over top
  8. Strain the lemon curd
  9. Refrigerate covered for a few hours then it’s ready!
